The main purpose:
Responsible for the effective planning, control, and management of all beverage stock to support operational requirements. Ensures minimum stock holding, maximum conversion, and compliance with CTICC standards.
Reporting to the: Food and Beverage Controller
Key responsibilities will include but are not limited to :
1) Beverage Store Management
- Plan and manage beverage orders per weekly event schedules.
- Monitor cost prices and report fluctuations.
- Ensure stock receipt, storage (FIFO), issuing, and record-keeping per SOPs.
- Conduct accurate stocktakes and maintain reports.
- Collaborate with Event Executives, Beverage, Facility, and Chef teams.
- Attend weekly operations meetings.
- Supervise Section Leaders and Storemen to ensure efficient service.
- Manage operating equipment allocation and maintenance.
- Ensure stock security and proper handovers.
2) Service Area Organisation
- Maintain food and wine knowledge to enhance client service.
- Ensure venues are correctly set up per function sheets.
- Enforce “Clean as you go” practices.
- Ensure safe use of equipment and clear pathways.
- Coordinate stock and operating equipment orders in advance.
- Oversee OE (cutlery, crockery, glassware, linen) returns.
- Ensure kitchens and coffee machines are cleaned and prepared for next day.
- Provide setup teams with clear instructions for efficient venue preparation.
3) Staff Management
- Verify staffing requisitions per event requirements.
- Conduct quarterly performance reviews.
- Manage workplace diversity and discipline.
- Deliver daily on-the-job training and assessments.
- Hold regular meetings, handovers, and briefings.
