Restaurant Manager

As a Restaurant Manager onboard the Eastern & Oriental Express, you will play a vital role in delivering an exceptional dining experience that reflects the highest standards of luxury hospitality. You will be responsible for overseeing all aspects of restaurant operations, ensuring seamless service, and supporting the smooth delivery of world‑class cuisine to our guests throughout their journey.

Your responsibilities include:

• Leading and managing the onboard restaurant team to deliver flawless service and memorable guest experiences.
• Ensuring all dining operations are conducted in line with Belmond’s luxury service standards and international hospitality best practices.
• Coordinating with culinary staff to guarantee the highest quality of food preparation, presentation, and menu execution.
• Managing inventory, ordering, and storage of food and beverage supplies while maintaining optimal stock levels.
• Implementing service improvement programs and projects to enhance efficiency, guest satisfaction, and overall dining quality.
• Overseeing table settings, dining room ambiance, and guest interactions to ensure consistency with luxury brand expectations.
• Supporting strategies that align restaurant operations with the train’s planned schedules and guest itineraries.
• Ensuring clear communication and workflow between restaurant staff, kitchen teams, and onboard management.
• Compiling service performance metrics, guest feedback, and operational reports, recommending improvements based on findings.

Requirements

• A Diploma or Degree in Hospitality Management, Culinary Arts, or a related field is required.
• Minimum 5 years of hands‑on experience in fine dining, luxury hotels, cruise ships, or premium hospitality environments.

• Proven expertise in managing restaurant operations, including staff leadership, guest service, and food & beverage coordination.
• Strong knowledge of international dining standards, wine service, and luxury hospitality protocols.
• Demonstrated ability to oversee inventory management, ordering, and cost control while maintaining premium quality standards.
• Excellent communication and interpersonal skills, with the ability to lead a multicultural team and interact with high‑profile guests.
• Familiarity with health, safety, and hygiene regulations in hospitality operations; certification in food safety is an advantage.
• Ability to work collaboratively with culinary teams, service staff, and management to ensure seamless guest experiences.
• Commitment to excellence, attention to detail, and maintaining the highest standards of service in a luxury rail environment.

Interest in staying current with industry trends, such as advancements in rail technology and sustainability initiatives.

Experience in the hospitality industry is a bonus, but not a necessity.
